2 lbs. med. shrimp, shelled and deveined
1 1/4 cups pineapple juice
1/3 cup light soy sauce
3 Tbsp. honey
1 Tbsp. olive oil
1/2 tsp. ground ginger
1 1/2 Tbsp. cornstarch

Methods/steps

Place shrimp in a glass bowl.
Combine 1 cup of the pineapple juice, soy sauce, honey, olive oil, and ginger in a saucepan. Bring to a boil.
Dissolve cornstarch into remaining 1/4 cup pineapple juice. Stir into boiling sauce. Remove from heat and allow to cool to room temperature.
Pour pineapple sauce over shrimp. Place in refrigerator and marinate for 2 hours. Soak 24 wooden skewers in water for 30 minutes.
Place 2 shrimp on each skewer and broil for 8 minutes, turning to brown evenly.
