2 cups cooked rice
2 cups reduced fat cheddar cheese
2 cups chopped cooked chicken breast
12 ounces fat-free evaporated milk
1/2 cup egg substitute
2 Tablespoons light margarine, melted
salt and pepper, to taste

Methods/steps

Preheat oven to 350°. Lightly grease a 13" x 9" baking dish.
Combine all ingredients. Mix well. Bake 45 minutes.

This is VERY yummy! My whole family LOVES it. The last time I made it, my not quite 2-year-old ate 5 helpings! I made it according to directions the first time, but since then have used brown rice instead of long grain rice and I also usually add chopped frozen broccoli... YUM!
