1 1/2 cups oat bran**
1 1/4 cups nonfat buttermilk
1 cup whole wheat flour
1 teaspoon baking soda
1/3 cup brown sugar
2 egg whites
1 cup chopped dried apricots

Methods/steps

Preheat oven to 350 degrees.

Combine the oat bran and buttermilk and set aside for 15 minutes.

Combine the flour, baking soda and brown sugar; stir to mix well. Add the
bran mixture and egg whites; stir just until the dry ingredients are
moistened. Fold in the apricots.

Line muffin tins with paper liners. Fill each 3/4 full with the batter.
Bake for 16 to 18 minutes or just until a wooden pick inserted in the
center of a muffin comes out clean.

Remove from oven and allow to sit for 5 minutes before removing the
muffins. Serve warm or at room temperature.

Additional Tips

**Oat Bran is usually found on the baking aisle of your favorite grocery store, although it is sometimes found with the hot cereals.
