Preheat oven to 375 degrees. Spray a 12 cup muffin pan with non-stick cooking spray.
In a large bowl, combine biscuit mix, milk, oil and egg just until moistened. Fold in cheese and bacon. Fill muffin cups 3/4 full with batter. Bake for 20 minutes or until golden brown.
Remove from oven and allow to sit for 10 minutes before removing the muffins. Serve warm or at room temperature.
