14 oz turkey kielbasa -- cut in 1/2 " slices
1 small white onion -- quartered and separated
1 cup thinly sliced carrot
15 ounces pineapple chunks in juice -- save juice
1 tablespoon cornstarch
1/2 teaspoon ground ginger
6 tablespoons water -- or a bit less
2 tablespoons low sodium soy sauce
Hot cooked rice-optional

Methods/steps

In a large nonstick skillet stir-fry sausage for 3-4 min or until slightly browned. Add onion,and carrots; stir-fry until crisp tender.

Drain pineapple, reserving juice. Add pineapple to meat mix.

In a small bowl, combine cornstarch and ginger. Stir in water, soy sauce, and pineapple juice until smooth. Add to skillet.

Bring to boil; cook and stir for 1-2 min until thickened.

Serve over rice if desired. (Add points for rice.)

Additional Tips

Halfmysize.com's Notes:

Very good dish! We substituted green peppers for the carrots and served it over rice. The rice took away from the flavor of the dish. It's actually much better without the rice. Would be excellent made with shrimp or chicken instead of sausage too.
