Preheat oven to 350 degrees. Spray muffin pans with non-stick cooking spray.
In a medium bowl, mix flour, baking powder, salt, lemon peel, sugar, cinnamon and nutmeg. Add egg substitute and mashed bananas and stir until dry ingredients are moistened. Add chocolate chips and stir to mix. Evenly spoon the mixture into the prepared muffin tins.
Bake for 16-18 minutes in preheated oven or just until a wooden pick inserted in the
center of a muffin comes out clean.
Remove from oven and allow to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
