20 oz. can crushed pineapple in juice
1 oz. pkg. (4 serv. size) fat-free sugar-free butterscotch instant pudding mix
3 large apples, cored and diced
8 oz. fat free whipped topping, thawed
2 Tablespoons chopped peanuts

 

Methods/steps

Mix pineapple and butterscotch pudding mix together. (Do not drain pineapple.) Fold in apple and whipped topping. Refrigerate at least 1 hour before serving. Divide evenly among 6 dessert dishes. Garnish each serving with 1 teaspoon of chopped peanuts.

This recipe has been a hit at parties and at home with the family. We prefer pecans rather than peanuts, but it's delish!

Such a super easy salad to make when you don't have a lot of time. I've taken it to potlucks and it's a hit, plus my kids (5,7) love it too!
