Serves - 8 (3/4 cup each)

2 medium cucumbers, thinly sliced
4 green onions, thinly sliced
2 Tablespoons fresh parsley, minced
1/4 cup fat-free sour cream
2 Tablespoons fresh dill, minced
1 Tablespoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon prepared mustard
1/8 teaspoon ground black pepper
3 small tomatoes, sliced

Methods/steps

In a large bowl, combine the cucumbers, green onions and parsley. In a small bowl, combine sour cream, dill, vinegar, salt, mustard and pepper. Pour over cucumber mixture and toss to coat. Divide among eight salad plates and top with tomato slices.

Extremely easy to make. I used grape tomatoes and cut them in half and added them to the mix. I bought cilantro instead of parsley by mistake but added it and it came out fine. I think it should be eaten the same day that it's made. Brought it to work the next day for lunch and it was VERY watery
