2 large tomatoes, chopped
1/2 cup red onion, diced
1/4 cup chopped parsley
1 Tablespoon red wine vinegar
salt and pepper, to taste

Methods/steps

In a large bowl, combine corn, tomatoes, and onion. Toss with parsley and vinegar; season with salt and pepper, as desired.
