In a non-stick skillet, saute chicken in olive oil until cooked, about 5 min. per side depending on thickness. Transfer to a serving platter. Add balsamic vinegar and margarine to the skillet. Stir until margarine is melted. Pour sauce over chicken and sprinkle with parsley.
