Preheat oven to 350 degrees. Spray six large muffin cups or six (6 oz.) custard cups with non-stick cooking spray. Trim crusts from bread. Spray both sides of bread slices with non-stick cooking spray. Place slices into prepared cups. Bake 11 to 13 minutes or until toasted and lightly browned.
Spray non-stick skillet with cooking spray. Over medium heat, cook green onion for 1 minute; add egg substitute, ham, salt and pepper. Stir continuously to scramble until eggs are set. Divide equally among bread cups. Sprinkle with cheese and serve.
