1 cup unsweetened applesauce
1/2 cup quick-cooking oats
1 2/3 cups whole wheat flour
1/2 cup sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. ground cinnamon
2 egg whites
3/4 cup coarsely chopped fresh cranberries

Methods/steps

Preheat oven to 350 degrees. Spray an 8" x 4" loaf pan with non-stick cooking spray.

In a small bowl, combine applesauce and oats. Set aside for 5 minutes.

In a large bowl, combine flour, sugar, baking soda, baking powder and cinnamon; stir to mix well. Add the applesauce mixture and egg whites. Stir just until the dry ingredients are moistened. Fold in the cranberries.

Bake for about 45 minutes in preheated oven or just until a wooden pick inserted in the
center of the loaf comes out clean.

Remove from oven and allow to sit for 10 minutes. Remove from loaf pan and cool on a wire rack before slicing.

I found this recipe to be very dry. Perhaps there was a liguid ingredient that was accidently left out. Hope the person that submitted this recipe will double check the ingredients because it could be a good recipe if it wasn't so dry.
