Preheat oven to 450 degrees. Dissolve yeast and sugar in warm water in a large mixing bowl. Add 1/2 cup of flour and beat until smooth. Gradually add remaining flour and salt, mixing until a soft dough forms. Add small amounts of warm water if mixture seems too dry.
Transfer dough to a lightly floured work area and knead gently for 5 minutes. Pull off dough by the handful and roll into a long snake-like strip.
Lightly spray a non-stick cookie sheet with non-stick cooking spray. Arrange strips on cookie sheet in pretzel shapes. Sprinkle with additonal salt, if desired.
Allow to rise for 15 to 20 minutes. Bake for 10 minutes or until golden brown.
