1/4 cup olive oil
1/2 cup plain low-fat yogurt
3/4 cup unbleached flour
1/2 cup whole wheat pastry flour
1/8 teaspoon salt

Methods/steps

Preheat oven to 400 degrees. In a large bowl, combine the oil and yogurt, mixing well. In a separate bowl, combine the flours and salt. Stir into the oil-yogurt mixture, 1/4 cup at a time, until well combined. Roll the mixture into a ball and flatten it into a thick pancake. Wrap in waxed paper and refrigerate 20 minutes. Between two sheets of waxed paper, roll the chilled dough into a large circle. Transfer dough into a 9" pie plate and chill for 15 minutes. Add pie filling of your choice and bake according to directions.

Additional Tips

To bake unfilled, preheat oven to 400 degrees. Prick crust on bottom and sides with a fork. Bake for 15 or 20 minutes or until golden brown. Cool before adding filling.
