2 1/2 cups quick cooking oats
2 tsp baking powder
1 cup skim milk
1/2 cup Eggbeaters egg substitute
1/2 cup unsweetened applesauce
1/4 cup Splenda
2 tsps pumpkin pie spice
1 cup canned pumpkin
1 tsp vanilla

Methods/steps

Preheat oven to 350 degrees. Spray an 8" square baking dish with non-stick cooking spray.

In a medium mixing bowl, combine wet ingredients. In a separate bowl, combine dry ingredients. Stir dry ingredients into wet ingredients. Pour into prepared baking dish.

Bake for 40-45 minutes, or until toothpick inserted into center comes out clean. Cool completely. Cut into 6 bars.
