Banana Oat Bread Pudding

4 slices whole grain wheat cinnamon swirl bread
1 cup quick cooking oats
2 1/2 cups skim milk
1/4 cup light margarine
4 large bananas, sliced
1/3 cup brown sugar
1/4 cup raisins, optional

Methods/steps

In a large bowl, break bread into small pieces. Add oats and milk; stir.
Let stand for 30 minutes.

Preheat oven to 350 degrees. Lightly grease an 8x8 inch baking dish.

To the milk mixture, add margarine, bananas, brown sugar and raisins (if
desired). Stir just to combine and pour into prepared pan.

Bake in preheated oven for 45-55 minutes, or until pudding has set. Cool
before serving.

I made half the recipe, put in the 1/4 cup raisins. Counted it as 4 servings at 4 pts each. Excellent breakfast! Thinking of substituting berries the next time for the bananas
