Preheat oven to 300 degrees.
Beat cream cheese, sugar, lemon juice, lemon peel and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended.
Spray 9-inch pie plate with cooking spray; sprinkle bottom with crumbs.
Pour cream cheese mixture into prepared pie plate.
Bake at 300°F for 45 minutes or until center is almost set. Turn oven off. Cool for about 30 minutes with oven door open wide. Remove from oven and allow to fully cool.
Refrigerate 3 hours or overnight. Top with fruit; drizzle with strawberry preserves.
