Preheat oven to 300 degrees.
Combine margarine, sugar, egg substitute, molasses and vanilla; beat with an electric mixer until smooth. In a separate bowl, combine flour and baking soda. Add flour mixture to the margarine mixture; mix well. Stir in remaining ingredients.
Spray baking sheet with non-stick cooking spray. Drop by rounded teaspoonfuls onto baking sheet, about 1 1/2" apart.
Bake for about 16 minutes, or until golden brown. Cool on baking sheet for 1 minute, then transfer to wire racks to cool.
