Yields: 2 1/2 cups
Points per Tbsp - 1

1/2 cup unsweetened cocoa
3/4 cup sugar
1 Tbsp. plus 1 tsp. cornstarch
1 cup skim milk
1/2 cup fat free evaporated milk
3 Tbsp. reduced fat peanut butter
2 tsp. vanilla extract

Methods/steps

Place cocoa, sugar and cornstarch in a saucepan and stir to mix well. Using a wire whisk, slowly stir in the milk and evaporated milk. Place the saucepan over medium heat; cook, stirring constantly, for 5 minutes, or just until the mixture comes to a boil.
Reduce heat to low, add the peanut butter and cook, stirring constantly for 2 minutes, or until the peanut butter has melted.

Remove the saucepan from the heat and stir in the vanilla extract.

Transfer the mixture to a small dessert fondue pot to keep warm. Serve with chunks of bananas, apples, pears, whole strawberries, low fat cookies or whatever you desire.
