Buckeyes (aka Peanut Butter Balls)
Serves - 72
Pts. - 2 

2 cups reduced-fat peanut butter
1/4 cup light margarine
3 3/4 cups powdered sugar
12 ounces semisweet chocolate chips
2 Tablespoons vegetable shortening

Methods/steps

Line baking sheets with wax paper.

Beat peanut butter and margarine until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1-inch balls; place on baking sheets and freeze for 1 hour.

Melt chocolate chips and shortening in a microwave-safe bowl on HIGH for 1 minute; stir. If necessary, microwave an additional 15 seconds, just until chips are melted being careful not to scorch chocolate.

Dip peanut butter balls in melted chocolate, using a toothpick. Leave a portion of the center uncovered. Return to baking sheets and refrigerate until chocolate is set.

Store in covered container in refrigerator.

Yield: 6 dozen
