Oatmeal Cinnamon Chip Cookies
Serves - 42
Pts - 1

6 Tablespoons light margarine
3/4 cup brown sugar
3 Tablespoons liquid egg substitute
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup quick cooking oats
1/2 teaspoon baking soda
1/2 cup cinnamon chips*

Methods/steps

Preheat oven to 300 degrees. Spray a baking sheet with non-stick cooking spray.

In a large mixing bowl, combine margarine, brown sugar, egg substitute and vanilla extract. With an electric mixer, beat until smooth. In a separate bowl, combine flour, oats and baking soda; mix well. Add the flour mixture to the margarine mixture and mix well. Stir in the cinnamon chips.

Drop rounded teaspoonfuls of dough onto prepared baking sheet, about 1 1/2 inches apart. Flatten each cookie slightly with the tip of a spoon.

Bake in preheated oven for 15 to 18 minutes, or until lightly browned and crisp. Remove from oven and cool on the pan for 1 minute. Then transfer to wire rack to cool completely.

*Cinnamon chips are sometimes a seasonal item, usually found near the chocolate chips.

Yield: 3 1/2 dozen cookies
