Banana Rum Coconut Cookies

2/3 cup packed brown sugar
1 medium ripe mashed banana
1/2 cup unsweetened applesauce
1 tsp. rum extract
3/4 cup flour
1 cup quick cooking oats
1/2 cup flaked sweetened coconut
1/2 cup raisins
1 tsp. baking powder
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/8 tsp. ground ginger

Methods/steps

Preheat oven to 350 degrees.

In a large mixing bowl, combine brown sugar, banana, applesauce and rum extract. With an electric mixer, beat at medium speed until blended. In a separate mixing bowl, combine flour, oats, coconut, raisins, baking powder, cinnamon, nutmeg and ginger; stir well. Stir flour mixture into banana mixture, mixing well. Drop dough by Tbsp. onto parchment-lined baking sheet. Bake for 18 minutes or until lightly browned. Remove from pan and cool completely on wire rack.

Yield: 20 cookies
