Ingredients:
1 3/4 cups all-purpose flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
3/4 cup orange juice
1/4 cup vegetable oil
2 tsp. grated orange zest
1 cup fresh or frozen blueberries

Topping:
3 Tbsp. all-purpose flour
3 Tbsp. brown sugar
1/4 tsp. ground cinnamon
2 Tbsp. light margarine

Methods/steps

Preheat oven to 400 degrees. Spray a 12 cup muffin pan with non-stick cooking spray.

In a medium bowl, mix flour, sugar, baking powder, and salt. In another bowl, combine egg, orange juice, vegetable oil and orange zest. Gradually add wet ingredients into the flour mixture. Stir just until dry ingredients are moistened. Fold in blueberries. Evenly spoon the mixture into the prepared muffin tins.

In a small bowl, mix flour, brown sugar and cinnamon. Cut in margarine until mixture is like coarse crumbs. Sprinkle over tops of mixture in each muffin tin.

Bake for 18 minutes in preheated oven or just until a wooden pick inserted in the center of a muffin comes out clean.

Remove from oven and allow to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
