I have made this casserole for the past two Sundays now and my family loves it. This time I added some red and green peppers to it and some green onions. It's definitely a keeper at my home.

Easy, fast, good and freezes well! I could not find the Healthy Choice sausage so I used MorningStar Farms sausage patties (1 box) - and they worked just fine.

This dish is wonderful, I use the Southwest style egg beaters and I add a little turkey bacon to it as well. Good stuff!!

I made this casserole this morning for a work potluck, and it was the only thing that didnt have leftovers. I used the Southest Egg beaters for a little more spice, and used turkey breakfast patties. If you do decide to make this the night before like I did, I would not put the cheese on yet, I would melt in on the next day when you re-heat it the microwave. Fat free cheese doesnt reheat as well. But now my new go to!
