8 ounces boneless skinless chicken breast halves (2- 4 oz. breasts)
1/3 cup tomatoes, diced
1/4 cup green pepper, diced
1/2 cup dijon mustard
1/4 cup green onions, chopped
1/4 cup mushrooms, chopped
1 tablespoon margarine
1 clove garlic, minced
3/4 cup white wine

Methods/steps

Melt margarine in non-stick skillet over medium-high heat. Saute garlic in melted margarine until translucent. Add tomato, green onion, green pepper, mushrooms, and 1/4 cup of white wine; continue to saute. Meanwhile, spread mustard onto chicken breasts and add to skillet. Add another 1/4 cup of white wine and cook for about 10-15 minutes. Turn chicken and add remaining 1/4 cup of white wine; cover and cook for about 10 more minutes or until chicken is done.
