4 oz. sweet Italian style turkey sausage, casings removed
2 celery stalks, finely chopped
1 onion, finely chopped
1 (1 lb) bag herb-seasoned bread stuffing mix
2 McIntosh or Jonathan apples, peeled and diced
2 Tbsp. minced fresh sage leaves
1 tsp. dried thyme
1/2 tsp. freshly ground black pepper
1 (14 1/2 oz.) can reduced sodium chicken broth

Methods/steps

Crumble the sausage into a large nonstick skillet and cook, stirring until no longer pink; transfer to a plate and pour off the fat. Return the skillet to the heat and add the celery and onion; cook until softened and set aside.

Combine the stuffing mix, sausage mixture, celery and onion mixture, apples, sage, thyme and pepper in a large bowl. Stir in the broth, 1 cup at a time, until well moistened. Let stand at least 15 minutes at room temperature; then stuff into the turkey and roast immediately.

Note: If preferred, stuffing can be baked in muffin tins at 350 degrees for about 30-35 minutes.
