Garlic Spinach and Tomatoes

Description

I served this with broiled salmon. It was the perfect side! Healthy, flavorful and couldn’t be easier to make.

1 tablespoon olive oil
2 tablespoon minced garlic
1 cup cherry tomatoes, halved
10 oz baby spinach
1/4 teaspoon salt

Methods/steps

Heat the oil in a skillet over medium high heat. Add the garlic and saute for 30 seconds, stirring often. Add the tomatoes and saute until they start to get soft. Add the spinach and stir. Cook until the spinach has just wilted, stir in the salt, and remove from the pan. Serve hot.
