1 1/2 cups Splenda
1 cup nonfat buttermilk
1/2 cup reduced fat Bisquick
3 large eggs
1/3 cup diet margarine, melted
1 teaspoon vanilla extract

Methods/steps

Preheat oven to 350 degrees. Spray a 9" pie plate with non-stick cooking spray.

In a large bowl, combine all ingredients. Beat with an electric mixer for 1 minute on medium speed. Pour into prepared pie plate. Bake about 30 minutes, or until knife inserted into center comes out clean. Cool for at least 5 minutes before serving. Serve with fresh fruit, if desired.
