Lemon Buttermilk Bars

1 package lemon cake mix
1 cup egg substitute, divided
2 Tbsp. vegetable oil
1 cup low fat buttermilk
1/2 cup light margarine, melted
3/4 cup sugar
1 tsp. vanilla extract

Methods/steps

Preheat oven to 350 degrees. Spray a 9" x 13" baking pan with non-stick cooking spray. Reserve 1 cup of dry cake mix and set aside.

In a large bowl, combine remaining cake mix, 1/4 cup egg substitute and oil; blend well to form dough. Press dough into bottom of prepared baking pan.

In medium bowl, beat 3/4 cup egg substitute, buttermilk, margarine, sugar and vanilla until well blended. Slowly add reserved cake mix and beat on medium speed until mixture is smooth, about 2 minutes. Pour over dough in baking pan and bake for 35 minutes or until light brown on top. Cool completely and cut into bars.

These bars are very good. The top layer becomes kind of "custardy". I didn't have egg substitute thawed so I used 4 eggs but then replaced the vegetable oil with unsweetened applesauce in order to keep the points value the same.
