Serves - 24 1 package lemon cake mix Methods/stepsPreheat oven to 350 degrees. Spray a 9" x 13" baking pan with non-stick cooking spray. Reserve 1 cup of dry cake mix and set aside. In a large bowl, combine remaining cake mix, 1/4 cup egg substitute and oil; blend well to form dough. Press dough into bottom of prepared baking pan. In medium bowl, beat 3/4 cup egg substitute, buttermilk, margarine, sugar and vanilla until well blended. Slowly add reserved cake mix and beat on medium speed until mixture is smooth, about 2 minutes. Pour over dough in baking pan and bake for 35 minutes or until light brown on top. These bars are very good. The top layer becomes kind of "custardy". I didn't have egg substitute thawed so I used 4 eggs but then replaced the vegetable oil with unsweetened applesauce in order to keep the points value the same.
