Orzo Salad

1 pound orzo, uncooked
3/4 cup fat-free Italian salad dressing
1/2 cup diced red onion
8 ounces cherry tomatoes, halved
6 ounces black olives
1/3 cup fresh parsley, minced
1/2 cup fresh spinach
1/4 cup fat-free Parmesan cheese, shredded

Methods/steps

Prepare orzo pasta according to package directions.  Rinse with cold water and drain well. Set aside.

Chiffonade spinach by placing several spinach leaves together and roll up from the long side, then make small slices with your knife.  Set the spinach aside in the refrigerator until ready to serve.

In a large bowl, toss all of the ingredients together with salad dressing, except the spinach and Parmesan cheese.  Chill for at least one hour.

Before serving, toss in the spinach along with the Parmesan cheese.
