8 oz. whole wheat thin spaghetti
3/4 cup frozen green peas
1 cup plus 2 Tbsp. evaporated skim milk
3 Tbsp. egg substitute
3 Tbsp. reduced fat grated Parmesan
1 tsp. minced garlic
1 cup sliced fresh mushrooms
1 cup diced ham
salt and pepper, to taste

Methods/steps

Cook the spaghetti according to package directions until almost al dente. About 2 minutes before pasta is done, add peas and cook until the peas are tender. Drain well and return to pot to keep warm.

In a small bowl, combine the evaporated milk, egg substitute, Parmesan, salt and pepper. Stir to mix well; set aside.

Spray a non-stick skillet with cooking spray and place over medium-high heat. Add ham, mushrooms, and garlic; stir fry for about 4 minutes or until the mushrooms are tender and the ham is slightly browned.

Reduce heat to medium-low. Add pasta to the skillet mixture. Slowly pour the evaporated milk mixture over the pasta and toss gently for a couple of minutes, or until the sauce thickens a bit. Serve hot.
