Southwestern Taco Chicken

1 1/2 pounds boneless, skinless chicken breast halves
15 oz. can corn, drained
15 oz. can black beans, rinsed and drained
15 oz. can diced tomatoes
1 package taco seasoning mix
6 Tablespoons fat free sour cream, optional

Methods/steps

Spray slow cooker with non-stick cooking spray. Place chicken breasts in
bottom on slow cooker. Add corn, black beans, diced tomatoes and taco seasoning. Stir gently. Cook on LOW for 6-7 hours or until chicken is done. Top with a tablespoon of fat free sour cream, if desired, before serving.

I love this. What I do instead, is shred the chicken and use it on tortillias. Sometimes I use canned white meat chicken too-then I only simmer it on the cook top instead of in the crockpot. Good as leftovers
