Streusel Topped Sweet Potato Casserole

2 1/2 pounds sweet potatoes
1/4 cup light margarine
1/4 cup brown sugar
1/4 cup flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Methods/steps

Preheat oven to 350 degrees. Spray an 8"x8" baking dish with non-stick
cooking spray.

Peel and cube sweet potatoes. Boil potatoes until tender. With an electric
mixer on low speed, mix until potatoes are smooth. Spread potatoes evenly
into prepared baking dish.

In a small mixing bowl, combine margarine, brown sugar, flour, cinnamon,
and salt. Work mixture together with a fork until crumbly. Sprinkle
topping evenly over potatoes.

Bake in preheated oven for about 30 minutes.
