2 large eggs, lightly beaten
2/3 cup cottage cheese, lowfat
3/4 cup fat-free sour cream
2 teaspoons lemon juice
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup all-purpose flour

Methods/steps

Combine all ingredients in a large bowl. Let batter sit for 10 minutes so that the flour becomes fully moistened. Heat a non-stick skillet over medium heat. Pour or spoon about 1/4 cup of batter for each pancake. Let cook about 2 minutes, until large holes appear in the pancake surface and the edges look dry. Flip carefully and cook for 2 more minutes.

Serve with fresh fruit or lite syrup, if desired.
