1 cup light margarine, softened
1 1/4 cups sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour

Methods/steps

Beat margarine in a large mixing bowl with an electric mixer for 30 seconds. Add 1 cup of sugar, the baking powder and salt. Beat until combined. Add egg and vanilla until combined. Beat in as much of the flour as possible. Stir in any remaining flour. Cover and refrigerate for 1 hour.

Preheat oven to 300 degrees. Shape dough into 1" balls. Roll balls in remaining 1/4 cup of sugar. Place 2" apart on ungreased cookie sheets.

Bake for 15 minutes or until tops are slightly crackled and sides are set. Do not brown. Remove cookies from oven and transfer to a wire rack to cool.

NOTE: For a festive look, roll dough in colored sugars instead of granulated sugar.

These cookies are delicious! They are very easy to make, taste like cut-outs only without the mess, they come out beautiful rolled in sugar or sprinkles, and they freeze well! I will be making several batches for the holidays.
