20 oz. can pineapple chunks, drained
15 oz. can mandarin orange segments, drained
4 Tbsp. shredded coconut
1 cup nonfat plain yogurt
1/4 tsp. coconut extract
1 tsp. vanilla extract
1 Tbsp. Splenda

Methods/steps

In a mixing bowl, combine pineapple, mandarin oranges, and coconut.

In a small bowl, combine yogurt, vanilla extract, coconut extract and Splenda. Stir well to mix thoroughly. Pour over fruit mixture and toss to combine well.

Cover and refrigerate at least 30 minutes. Gently stir again before serving.

This recipe is not only easy to make, but "DELISH!" It tastes like its FULL FAT and SUGAR COUSIN!!!!

Easy and delicious--that's what I like!!! I may add a little extra Splenda next time.
